Start the day with avocado toast in the open-air pavilion before basking by the pool, set so close to the hillside rocks that you can reach out and touch them. Located inside the newly refurbished Rosedon Hotel, Huckleberry pulls off farm-to-table fare with a dose of southern flavor. Dine in the hotel’s historical rooms, tucked away from the hustle of Hamilton, or out on the veranda overlooking lush, manicured gardens. Formal setting aside, the ambiance is relaxed and even romantic. Go green with the Huckleberry salad topped with rockfish, indulge in executive chef Matthew Weber’s lauded braised-beef short ribs, or try some crunchy honeycomb caviar—a welcome treat after one of the restaurant’s two-hour beekeeping lessons.

Colonial Surprise

The traditional Colonial architecture of the Hamilton Princess Hotel & Beach Club belies what you’ll find inside—approximately 300 works of contemporary and pop art by the likes of Andy Warhol, Banksy, Takashi Murakami, and Ai Weiwei, to name a few. Take a self-guided tour through the palatial “Pink Palace,” followed by yacht-gazing out back, where more sculptures dot the grounds. Bonus: The hotel’s themed “Marina Nights” series kicks off the first Friday in May with live music and festive cocktails.
